Ingredients
- 1 pound ground beef
- 0.5 medium yellow onion
- 2 tablespoons taco seasoning
- 0.5 cup water
- 12 6-inch corn tortillas
- 2 cups romaine lettuce
- 1 medium tomato
- 1 cup sharp cheddar cheese
- 0.25 medium yellow onion
- 1 medium lime
Cooking instructions
- Finely chop 1/2 medium onion for the beef. Shred the lettuce, dice the tomato, shred the cheddar, finely dice the remaining 1/4 onion, and cut the lime into wedges. (about 15 min)
- Heat a large skillet over medium-high heat. Add the ground beef and chopped onion. Cook for 6 to 8 minutes, breaking up the meat, until browned and the beef reaches 160°F. Drain excess fat if needed. (about 8 min) — Medium-high heat
- Stir in the taco seasoning and water. Bring to a simmer, then cook for 3 to 4 minutes, stirring occasionally, until the liquid is mostly absorbed and the beef is thickly sauced. (about 4 min) — Simmer
- Warm the tortillas in a clean skillet over medium heat for about 20 seconds per side, or wrap them in a damp towel and microwave until pliable. (about 4 min) — Medium heat
- Fill each tortilla with seasoned beef, lettuce, tomato, cheddar, and diced onion. Serve immediately with lime wedges. (about 2 min)
