Prep: 20 min · Cook: 15 min · Yield: 4 · Method: Stovetop
Ingredients
- 1.5 lb ground beef
- 4 count brioche buns
- 0.25 cup soy sauce
- 0.25 cup mirin
- 1 tbsp brown sugar
- 2 cup cabbage
- 1 tbsp ginger
- 3 count scallions
- 1 tbsp rice vinegar
- 1 tbsp vegetable oil
Cooking instructions
- In a small saucepan, combine soy sauce, mirin, and brown sugar. Simmer over medium heat until thickened into a glaze, about 5 minutes. (about 5 min)
- Thinly slice the cabbage, mince the ginger, and slice the scallions. Toss together in a bowl with rice vinegar and a pinch of salt. Set aside.
- Divide ground beef into 4 equal patties, indenting the centers slightly to ensure even cooking.
- Heat vegetable oil in a large cast-iron skillet over medium-high heat. Sear patties until browned and cooked to an internal temperature of 160°F, about 4-5 minutes per side. (about 10 min)
- Brush the glaze generously over the patties during the final minute of cooking, flipping once to caramelize slightly.
- Toast the brioche buns, then assemble each burger with a beef patty and a heap of the ginger slaw.
