Turkey Internal Temperature: Where to Check
See where to place a thermometer in turkey, how to avoid the bone, and when the bird is safely cooked and ready to carve.
Quick reference
- Minimum temperature: 165°F / 74°C Check with a food thermometer
- Innermost thigh: Insert into thickest area Avoid touching bone
- Innermost wing: Check the meaty joint area Avoid the bone
- Breast: Check the thickest part Insert from the side if useful
The safe temperature is 165°F
The turkey internal temperature should reach at least 165°F (74°C). Use an instant-read thermometer rather than judging doneness by skin color or cooking time alone. Ovens, bird size, pan shape, stuffing, and starting temperature can all change how quickly a turkey cooks, so take temperature readings near the end of the estimated cooking time and continue cooking if any tested area is below 165°F.
Where to check a whole turkey
Test three spots: the innermost thigh, the innermost wing, and the thickest part of the breast. These areas cook at different rates, so checking more than one location gives you a more reliable reading. Insert the probe into the meatiest portion, and keep the tip away from bones, which can give a misleading temperature reading.
- Innermost thigh: probe the thickest meat near the joint.
- Innermost wing: check the meaty area where the wing meets the body.
- Breast: check the thickest section, approaching from the side if needed.
How to take an accurate reading
Open the oven briefly and place the thermometer tip into the center of the meat, not just beneath the surface. If the reading seems unexpectedly low or high, reposition the probe and check again. For a stuffed turkey, verify the temperature in both the turkey and the center of the stuffing; the stuffing must also reach 165°F. Clean the thermometer between raw and cooked foods.
Rest before carving
Once all required areas reach 165°F, transfer the turkey to a cutting board and let it rest before carving. Resting gives the hot juices time to settle and makes slicing easier. Keep the turkey loosely tented if desired, but avoid wrapping it so tightly that the skin softens. Use the resting time to finish gravy, sides, or serving arrangements.
If one area is under temperature
If the thigh, wing, breast, or stuffing has not reached 165°F, return the turkey to the oven and check again after a short interval. Focus on the coolest area, but recheck the other locations before serving. Temperature is the dependable final check; color, clear juices, and the pop-up timer should not replace a thermometer reading.
