Stuffing Internal Temperature: How to Cook It Safely

Stuffing should reach 165°F (74°C) in the center. See when to fill poultry, when to bake separately, and how to cool leftovers safely.

Stuffing Internal Temperature: How to Cook It Safely

Quick reference

Choose the safest method

The safest and most predictable approach is to cook stuffing separately from the poultry. Spread it in a shallow, greased baking dish so heat reaches the center efficiently. This also makes it easier to check doneness and manage the cooking time. You can use the pan juices or a small amount of broth for flavor, but avoid making the mixture so wet that the middle stays cool while the edges overcook.

  • Bake until the center reaches 165°F / 74°C.
  • Use a food thermometer rather than relying on browning.
  • Keep the dish covered at first if the top browns too quickly.

If you stuff poultry

If stuffing goes inside a turkey, chicken, or other poultry, the center of the stuffing must reach 165°F / 74°C. Check it by inserting a food thermometer into the middle of the filling, not just the meat. The poultry itself must also reach 165°F / 74°C in the thickest areas. Because the filling can take longer to heat, stuffed poultry may require more cooking time than an unstuffed bird.

  • Stuff the cavity just before cooking.
  • Do not pack the stuffing tightly; leave room for heat to circulate.
  • Check several spots if the cavity is large or the filling is dense.

Never partially cook and hold

Do not partially bake stuffing and set it aside to finish later, and do not fill poultry with partially cooked stuffing. A warm, unfinished mixture can spend too long in an unsafe temperature range. Assemble the stuffing and cook it promptly, or prepare the ingredients separately and refrigerate them until you are ready to combine and bake. Keep raw poultry and its juices away from ready-to-eat ingredients.

  • Cook immediately after stuffing the bird.
  • Refrigerate prepared ingredients promptly.
  • Never use the counter to hold partially cooked stuffing.

Check doneness and serve

For a reliable check, place the thermometer probe in the thickest part of the stuffing. The reading should hold at 165°F / 74°C before serving. If the top is browned but the center is below temperature, continue cooking and check again in a few minutes. After cooking, serve promptly and refrigerate leftovers within two hours—or within one hour when the room temperature is above 90°F / 32°C.

  • Reheat leftover stuffing to 165°F / 74°C.
  • Keep leftovers refrigerated for 3–4 days.
  • Use a shallow container to cool leftovers more efficiently.
