How to Reheat Rice Safely
Reheat rice safely by chilling it promptly, adding a splash of moisture, and reheating leftovers until steaming hot and 165°F throughout.
Quick reference
- Cool and store: Promptly; refrigerate within 2 hours Use shallow containers
- Storage window: Use within 4 days Keep refrigerated
- Reheating target: 165°F / 74°C Check the center
- Texture tip: Add a splash of water Cover while heating
Cool and refrigerate promptly
To reheat rice safely, cool it promptly after cooking and refrigerate it within 2 hours. If the room or outdoor temperature is above 90°F / 32°C, refrigerate it within 1 hour. Spread a large batch into shallow containers so it cools more quickly, then cover and chill. Label the container with the date and use the rice within 4 days.
Before reheating
Only reheat the portion you plan to eat. Check that the rice has been refrigerated continuously and discard it if it was left out too long, smells unusual, or has an uncertain storage history. Do not repeatedly warm and cool the same batch: each cycle makes safe handling harder and can reduce quality.
- Scoop out one serving at a time.
- Keep the rest cold until needed.
- Do not mix freshly heated rice back into the chilled batch.
Microwave method
Put the rice in a microwave-safe bowl and break up any compacted sections. Add a splash of water—about 1 teaspoon per cup is a useful starting point—for better texture. Cover loosely with a lid or damp paper towel, then heat in short intervals, stirring between them, until steaming hot throughout. Microwave power and portion size vary, so check the center and reheat to 165°F / 74°C.
Stovetop method
Place the rice in a saucepan with a splash of water and cover with a tight-fitting lid. Warm over low to medium-low heat, stirring occasionally to separate the grains and prevent scorching. Continue until the rice is hot throughout and reaches 165°F / 74°C. If it begins to stick before the center is hot, add another small splash of water and lower the heat.
Oven method for larger portions
For a larger amount, put the rice in an oven-safe dish, sprinkle over a little water, and cover tightly with foil or a lid. Heat at 325°F / 163°C until the center reaches 165°F / 74°C; the exact time depends on the depth and quantity. Stir once if practical, then serve immediately. Keep any unused portion refrigerated rather than cooling and reheating it again.
