How to Reheat Mashed Potatoes Without Drying Them Out

Reheat mashed potatoes on the stovetop, in the oven, or in the microwave with gradual additions of milk and butter for a creamy finish.

How to Reheat Mashed Potatoes Without Drying Them Out

Quick reference

The key to creamy reheated potatoes

To reheat mashed potatoes without drying them out, use gentle heat and add moisture gradually. Stir in a little warm milk, cream, or melted butter rather than adding a large amount at once. Cover the potatoes whenever possible to trap steam, and stir periodically so the edges do not overcook. Since appliances and batch sizes vary, use the times below as starting points and heat until the center reaches 165°F / 74°C.

Stovetop method

Place the mashed potatoes in a saucepan over low heat. Add a splash of warm milk and a pat of butter, then cover. Stir every few minutes, scraping the bottom and sides, and add more warm milk or butter gradually if the potatoes look thick or dry. Continue until hot throughout, usually 10 to 15 minutes for a small or medium batch. Avoid high heat, which can make the potatoes stick or turn gluey.

  • Use a heavy saucepan if available.
  • Keep the lid on between stirs.
  • Finish with salt only after reheating.

Oven method

For a larger batch, spread the potatoes in a buttered ovenproof dish and smooth the surface. Dot with butter, stir in a small amount of warm milk if needed, and cover the dish tightly with foil or a lid. Heat at 350°F / 175°C until steaming hot in the center, usually 30 to 45 minutes depending on depth and quantity. Stir once halfway through if the dish is deep, then cover again and continue heating to 165°F / 74°C.

Microwave method

Transfer the potatoes to a microwave-safe bowl and cover loosely with a lid or damp paper towel that allows some steam to escape. Heat at medium power in 60- to 90-second intervals, stirring between each round. Add warm milk and butter gradually as the potatoes loosen, rather than pouring it all in at the start. One or two servings may take about 3 to 6 minutes, but bowl shape and microwave power can change the timing.

Fix the texture before serving

If the potatoes are still firm, add another small splash of warm milk and continue heating gently. If they seem loose, leave them uncovered for a minute or two while stirring. Taste and adjust salt, pepper, or butter at the end. Do not reheat more than you plan to serve; repeated heating can dry the potatoes and makes even moisture harder to maintain.

  • Warm dairy blends in more smoothly.
  • Stir gently to avoid a pasty texture.
  • Serve as soon as the potatoes are hot.

Leftover safety

Refrigerate cooked mashed potatoes within two hours of cooking, or within one hour when the temperature is above 90°F / 32°C. Use refrigerated leftovers within 3 to 4 days, and reheat them to 165°F / 74°C before serving. A food thermometer is the most reliable way to check the center, especially when reheating a deep casserole or a large container.
