How to Make Pan-Seared Chicken Breast Juicy

Make juicy pan-seared chicken breast with even thickness, a dry surface, a hot pan, and a 165°F finish for tender, reliable results.

How to Make Pan-Seared Chicken Breast Juicy

Quick reference

Prepare the chicken evenly

For juicy pan-seared chicken breast, start with pieces of similar thickness. If one end is much thicker, place the chicken between sheets of plastic wrap or parchment and gently pound the thick end until the breast is about ¾ inch thick throughout. Pat both sides completely dry with paper towels, then season with salt, pepper, and any dry spices you like. A dry surface browns more effectively than a damp one.

Heat the pan properly

Use a heavy skillet, such as cast iron or stainless steel, and heat it over medium-high heat. Add a thin film of a high-heat cooking oil once the pan is hot. The oil should shimmer but not smoke heavily. Lay in the chicken without crowding; leave space between pieces so they sear instead of steam. Do not move them immediately after adding them.

  • Use enough oil to lightly coat the pan.
  • Sear in batches if needed.
  • Keep the thicker side positioned over the hotter part of the pan, if applicable.

Sear, then finish moderately

Cook the first side for about 3–5 minutes, depending on thickness, until deeply golden and the chicken releases easily from the pan. Turn it once, reduce the heat to medium or medium-low, and continue cooking. This moderate finish gives the center time to cook without burning the outside. If the pan becomes dry, add a small splash of water or broth rather than more oil.

Check temperature and rest

Use an instant-read thermometer in the thickest part, entering from the side for the most accurate reading. Chicken breast is ready at 165°F / 74°C. Because timing varies with thickness, pan material, and burner strength, temperature is more reliable than the clock. Transfer the chicken to a plate and let it rest for 3–5 minutes before slicing.

Optional quick pan sauce

After removing the chicken, lower the heat and add a little broth, water, or white wine to the skillet. Scrape up the browned bits, then simmer briefly until slightly reduced. Stir in a small knob of butter, or finish with lemon juice and chopped herbs. Spoon the sauce over the rested chicken just before serving.

  • Deglaze only after removing excess burned seasoning.
  • Taste before adding more salt.
  • Serve the sauce immediately for the best texture.
