How Long Can Cooked Rice Sit Out Safely?

Cooked rice should be refrigerated within 2 hours—or within 1 hour in hot conditions. Discard rice left out longer, even if you reheat it.

How Long Can Cooked Rice Sit Out Safely?

Quick reference

The safe time limit

Cooked rice can sit at room temperature for up to 2 hours. If the room, serving area, or outdoor setting is above 90°F / 32°C, shorten that window to 1 hour. After those limits, discard the rice rather than trying to save it. The same rule applies to plain rice, fried rice, rice bowls, and dishes made with cooked rice.

Why rice can become unsafe

Cooked rice holds moisture and can support the growth of bacteria when it stays warm for too long. It may look, smell, and taste normal even when it should no longer be eaten, so appearance is not a reliable safety check. Reheating does not necessarily undo unsafe storage: heat may reduce some hazards, but it cannot reliably make rice that was left out too long safe again.

What to do after cooking

Serve rice promptly, then refrigerate leftovers as soon as practical. Transfer a large batch to shallow containers so it cools more quickly, and leave the containers loosely covered while hot if needed before sealing them once chilled. Keep the refrigerator at 40°F / 4°C or below, and label the container if you may lose track of when it was stored.

  • Split large amounts into shallow containers.
  • Do not leave the full pot on the counter to cool for hours.
  • Refrigerate within 2 hours, or 1 hour in hot conditions.

How long refrigerated rice keeps

Use refrigerated cooked rice within 3–4 days. If you are unsure when it was cooked or how long it sat out, the safest choice is to discard it. When reheating rice that was stored promptly, heat it thoroughly to 165°F / 74°C and serve it hot. Reheat only the portion you plan to eat, since repeated cooling and warming adds unnecessary handling.

When to throw rice away

Discard cooked rice if it has been at room temperature beyond the 2-hour limit, or beyond 1 hour in temperatures above 90°F / 32°C. Throw it out if it has an uncertain storage history, was left in a warm car or outdoor setting, or has been refrigerated longer than 3–4 days. Do not rely on reheating, rinsing, or tasting a small bite to decide whether it is safe.
