Ground Meat Portion Guide: Burgers, Tacos, Meatballs, and Pasta Sauce

Quick reference

The basic portion rule

Buy 4–8 ounces of raw ground meat per person when it forms the main part of the meal, such as a burger or meatloaf-style patty. Use 2–4 ounces per person when meat shares the plate with pasta, rice, beans, vegetables, or a generous sauce. For four diners, that means roughly 1–2 pounds for burgers, or ½–1 pound for tacos, meatballs, or pasta sauce.

  • Choose the smaller amount for children or meals with substantial sides.
  • Choose the larger amount for hungry adults or lighter accompaniments.

Burgers: 4 to 8 ounces each

A 4-ounce patty makes a modest burger; 6 ounces is a dependable standard; 8 ounces creates a thick, substantial burger. Shape patties slightly wider than the bun because they shrink as they cook. For four burgers, buy 1½ pounds for six-ounce patties, allowing a little extra for trimming, shaping, or uneven portions. Keep patties chilled until they go on the grill or skillet.

  • Thin diner-style patties: 3–4 ounces each.
  • Standard burgers: 5–6 ounces each.
  • Large burgers: 7–8 ounces each.

Tacos: 3 to 4 ounces per person

For taco night, plan ¾–1 pound of ground meat for four people. This usually fills two or three tacos per person once tortillas, beans, cheese, salsa, and other toppings are added. Use closer to ¾ pound when serving rice, beans, or a large salad; use 1 pound when tacos are the whole meal or you want leftovers.

  • Soft or hard tacos: 3–4 ounces of cooked filling per person.
  • Bulk up the filling with beans, corn, peppers, or onions.

Meatballs: 4 to 6 ounces per person

When meatballs are served with pasta, bread, or vegetables, 4–6 ounces of raw ground meat per person is usually enough. That yields about four to six medium meatballs, depending on their size and the amount of breadcrumbs, egg, cheese, or vegetables mixed in. For four people, start with 1–1½ pounds. Make every meatball the same size so they finish cooking together.

  • Small meatballs: about 1 ounce each.
  • Medium meatballs: 1½–2 ounces each.
  • Large meatballs: 2½–3 ounces each.

Pasta sauce and mixed dishes

For a meat-forward ragù, use about 4 ounces of raw meat per person. For a lighter tomato sauce with vegetables, beans, or lentils, 2–3 ounces per person is enough. Four servings generally need ½–1 pound. The same smaller portion works for ground meat folded into rice bowls, stuffed vegetables, skillet meals, or casseroles where grains and vegetables provide much of the volume.

  • ½ pound: light, vegetable-rich sauce for four.
  • ¾ pound: balanced everyday pasta sauce.
  • 1 pound: hearty, meat-forward sauce.

Buying, cooking, and storing

Ground meat loses some weight as it cooks, so portion from the raw amount when shopping. If buying packaged meat, round up to the next available package size and use extra in a sauce, filling, or freezer portion. Cook ground beef, pork, lamb, or veal to 160°F/71°C; cook ground poultry to 165°F/74°C, checking the thickest part with a thermometer. Refrigerate leftovers within two hours and use them within 3–4 days.

  • Thaw frozen meat in the refrigerator, cold water, or the microwave—not on the counter.
  • Store raw ground meat in the refrigerator and cook or freeze it promptly.
