## Ingredients
- 1 lb ground beef
- 0.5 medium yellow onion
- 8 each corn tortillas
- 1.5 cups enchilada sauce
- 1 15-ounce can black beans
- 1 cup cheddar cheese
- 0.5 teaspoon kosher salt
- 0.5 teaspoon ground cumin

## Cooking instructions
1. Heat a large skillet over medium-high heat. Add the ground beef and onion. Cook, breaking up the beef, until no pink remains and the beef reaches 160°F, about 8 minutes. Drain excess fat if needed. (about 8 min) (Medium-high heat; beef to 160°F)
2. Stir in the salt and cumin. Cut the tortillas into 1-inch strips, then add them with the black beans and enchilada sauce. Stir until evenly combined. (about 2 min) (Medium heat)
3. Reduce the heat to medium-low and simmer until the tortilla strips soften and the sauce thickens slightly, about 5 minutes. (about 5 min) (Medium-low heat)
4. Sprinkle the cheddar evenly over the skillet. Cover and cook until the cheese melts, about 2 minutes. (about 2 min) (Medium-low heat)
5. Remove from the heat and rest for 2 minutes before serving. (about 2 min)
