## Ingredients
- 1 lb italian sausage
- 8 oz short pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 5 oz baby spinach
- 0.5 cup sun-dried tomatoes
- 1 small yellow onion
- 3 cloves garlic
- 1 tablespoon olive oil
- 1 teaspoon italian seasoning
- 0.5 cup parmesan cheese
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper

## Cooking instructions
1. Heat the olive oil in a large deep skillet over medium-high heat. Add the sausage and cook, breaking it into small pieces, until browned and the center reaches 160°F on an instant-read thermometer, about 6 to 8 minutes. (about 8 min) (Medium-high heat; sausage 160°F)
2. Add the onion and cook until softened, about 3 minutes. Stir in the garlic and Italian seasoning and cook for 30 seconds. (about 4 min) (Medium heat)
3. Pour in the broth and cream. Stir in the pasta, salt, and pepper, then bring to a gentle boil. (about 3 min) (Medium-high heat)
4. Reduce the heat to medium-low and simmer uncovered, stirring often, until the pasta is tender and the sauce thickens, about 10 to 12 minutes. (about 12 min) (Medium-low heat)
5. Stir in the spinach and sun-dried tomatoes and cook until the spinach wilts, about 2 minutes. (about 2 min) (Medium-low heat)
6. Remove from the heat and stir in the Parmesan until smooth. Let the pasta stand for 2 minutes before serving. (about 2 min) (Off heat)
