## Ingredients
- 1 15-ounce can white beans
- 2 medium yellow onions
- 4 slices sourdough bread
- 2 tablespoons olive oil
- 1 teaspoon fresh thyme leaves
- 0.25 cup goat cheese
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 2 tablespoons water

## Cooking instructions
1. Thinly slice the onions. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the onions and 1/4 teaspoon salt, stirring to coat. (about 5 min) (Medium heat)
2. Cook the onions, stirring every few minutes, until deeply golden and soft, 20 to 25 minutes. Add 1 tablespoon water if the pan becomes dry or the onions start sticking. (about 25 min) (Medium-low heat)
3. Drain and rinse the beans. In a bowl, mash them with the remaining 1 tablespoon olive oil, thyme, remaining 1/4 teaspoon salt, black pepper, and water until mostly smooth. (about 3 min) (Room temperature)
4. Wipe out the skillet and heat it over medium heat. Toast the sourdough slices in batches until crisp and lightly browned on both sides, 2 to 3 minutes per side. (about 6 min) (Medium heat)
5. Spread the mashed beans over the toasted sourdough. Top with the caramelized onions and crumble the goat cheese over the top. (about 2 min) (Room temperature)
