## Ingredients
- 8 oz macaroni
- 2 yellow onions
- 1 tbsp unsalted butter
- 1 cup whole milk
- 1 cup gruyère cheese
- 1 cup cheddar cheese
- 1 tsp kosher salt
- 0.25 tsp black pepper

## Cooking instructions
1. Thinly slice the onions. Melt the butter in a large oven-safe skillet over medium-low heat. Add the onions and 1/2 teaspoon salt, then cook, stirring occasionally, until deeply golden and soft, 20 to 25 minutes. (about 25 min) (Medium-low heat)
2. Meanwhile, bring a large pot of salted water to a boil. Cook the macaroni until just tender according to the package directions. Drain well. (about 10 min) (Boiling water)
3. Reduce the skillet heat to low. Stir in the milk, remaining salt, and pepper. Add the macaroni, Gruyère, and cheddar, stirring until the cheeses melt and coat the pasta, about 2 minutes. (about 2 min) (Low heat)
4. Spread the macaroni evenly in the skillet and arrange the caramelized onions over the top. Broil 4 to 6 inches from the heat until bubbling and lightly browned, 2 to 3 minutes. Watch closely to prevent scorching. (about 3 min) (Broiler on high)
5. Let the skillet rest for 5 minutes before serving. (about 5 min)
