## Ingredients
- 1 pound lean ground beef
- 1.5 cups couscous
- 1.5 cups low-sodium chicken broth
- 1 medium cucumber
- 2 medium tomato
- 0.75 cup crumbled feta cheese
- 1 medium lemon
- 0.5 cup fresh parsley
- 3 cloves garlic
- 1 teaspoon dried oregano
- 0.5 teaspoon ground cumin
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper

## Cooking instructions
1. Bring the chicken broth and 1 tablespoon olive oil to a boil in a medium saucepan. Stir in the couscous, cover, remove from the heat, and let stand for 5 minutes. Fluff with a fork. (about 7 min) (Boiling, then off heat)
2. Meanwhile, heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart, for 5 to 7 minutes, until browned and the thickest pieces reach 160°F. (about 7 min) (Medium-high)
3. Add the garlic, oregano, cumin, 1/2 teaspoon salt, and black pepper. Cook, stirring, for 1 minute, until fragrant. (about 1 min) (Medium)
4. Fluff the couscous again. Divide it among four bowls and top with the cooked beef, cucumber, tomato, feta, parsley, and lemon wedges. Season the vegetables with the remaining 1/2 teaspoon salt and squeeze lemon juice over each bowl. (about 2 min)
