## Ingredients
- 24 ounces fully cooked frozen dumplings
- 3 large yellow onions
- 3 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 2 cups beef broth
- 0.5 cup heavy cream
- 6 sprigs fresh thyme
- 1.5 cups gruyère cheese

## Cooking instructions
1. Heat the oven to 400°F. Thinly slice the onions and strip the thyme leaves from 2 sprigs, reserving the remaining sprigs for garnish. (about 10 min) (400°F)
2. Heat the butter and olive oil in a large ovenproof skillet over medium heat. Add the onions, salt, and pepper. Cook, stirring occasionally, until deeply golden and soft, 25 to 30 minutes. Lower the heat if the onions begin to scorch. (about 30 min) (Medium heat)
3. Stir in the broth, heavy cream, and thyme leaves. Simmer until slightly thickened, about 5 minutes. (about 5 min) (Gentle simmer)
4. Arrange the frozen dumplings in a single layer over the onion mixture. Sprinkle evenly with the Gruyère and place the reserved thyme sprigs on top. (about 5 min)
5. Bake uncovered until the dumplings are hot throughout, the sauce is bubbling, and the cheese is melted and browned, 15 to 18 minutes. Confirm the center of a dumpling reaches 165°F, then rest for 5 minutes before serving. (about 18 min) (400°F)
